Angel Shark is one of the favorites of locals in the know due to it’s great flavor, delicate texture, and overall versatility in the kitchen. A classic choice for fish tacos at many of our local eateries and a fish that adapts great to any style of cooking, including grilling, broiling, deep frying, or pan frying. See our recipe below for grilled fish tacos using our fresh, amazing Angel Shark.
If you love fish tacos, Angel Shark is a perfect choice!
- 2 - 3 lbs Angel Shark Filets
- Juice of two large Limes
- 4 Avocados, diced
- 2 tbsp Tequilla (Orange Juice can be substituted)
- 3 cloves of Garlic, minced
- 1 tbsp Olive Oil
- 1 tbsp Sea Salt
- 1/4 cup Cilantro, finely minced (optional)
- Fresh Avocado Salsa
- Cilantro - minced (to taste)
- Lime - Juice of 1
- clove garlic - 1, minced finely
- extra virgin olive oil - 1 tbsp.
- Jalapeno - 1, diced finely (optional)
- red onion - 1, chopped finely
Preheat grill to medium high setting. To start, combine the lime juice, tequilla, minced garlic, olive oil and cilantro (again, optional) in a large bowl and mix. Place shark filets in a shallow dish and cover completely with marinade and let stand for about 30 minutes.
Remove the filets, salt evenly and place on well heated *grill to prevent sticking, using oil on the grates if necessary. Leave untouched for about 6 minutes, then turn and cook for an additional 4. The fish should be flaky and opaque at the center.
In the meantime heat up your tortillas, and mix up the following fresh avocado salsa:
Break apart the Angel Shark filets and, If desired, heat leftover marinade to a boil, add a tablespoon or two of butter, and mix into fish.
Serve hot with Avocado Salsa and warmed tortillas. You will be amazed at how versatile and delicious this local catch can be.
*if you prefer or do not have a bbq, you can easily accomplish great results using a foil parcel or can even put on a sheet tray and placed under the broiler on HI.
