CRAB STUFFED SOLE

Instructions

1. Preheat oven to 375 and brush oil all over a 9 x 13 baking pan. Place toothpicks in a bowl of water to soak.
2. Melt butter in large sauté pan on medium heat. Sautee shallot and garlic until translucent, then mix in crab meat, parsley, and breadcrumbs. Remove from heat.
3. Season sole fillets with salt and pepper. Fill with the mixture, folding the sides of the fillet over the filling and securing with a toothpick. Place in the baking dish and spritz with lemon juice. Drizzle with olive oil.
4. Bake for 18 minutes or until fish flakes easily. Garnish with dill.
