We are big fans of ginger flavored anything at our house. And we eat more peaches in Summertime than most real life Georgians (bless their hearts).

I’m serving a fluffy Cous Cous as an additional side with this… well, because that is what I have handy and because we have a lot of mouths to feed over here. 🙂

Gingery Peach Salmon?

Ingredients

Instructions

1. Heat grill to med-high. In a small bowl combine vinegar, thyme, 3tbsp EVOO and some salt & pepper. Set aside.

2. In a large bowl, gently toss the onions, peaches, remaining 1 Tbsp EVOO, salt and pepper

3. Season the salmon with salt and pepper.

4. Grill the salmon and onions until the salmon is opaque and the onions are tender. 5 mins or so per side on the salmon.

5. After flipping the salmon, place the peaches on the grill and cook until tender (about 2 minutes per side).

6. Drizzle the salmon with the vinaigrette and serve with the onions and peaches.
